做法:春笋切成片后加(jiā )少许盐(yán )捞出后用清(qīng )水浸泡,生姜切片,葱切成(chéng )段。锅烧热,倒(dǎo )入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水(shuǐ )半掩(yǎn )住春笋,盖上(shàng )锅(guō )盖大火煮(zhǔ )开后转中火。煮到水快(kuài )熬干的时候(hòu )加入盐,翻(fān )炒均(jun1 )匀稍收汁时盖上锅盖焖。
