做法:春(chūn )笋切成片后(hòu )加少许盐捞出(chū )后用清水浸泡,生(shēng )姜(jiāng )切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加入生(shēng )抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住(zhù )春笋,盖上(shàng )锅盖大火(huǒ )煮开后转中火。煮到水快熬(áo )干的时候加入盐,翻(fān )炒均(jun1 )匀稍收汁时(shí )盖上锅盖(gài )焖(mèn )。
