做(zuò )法:洗净(jìng )宰好鲫鱼,洗净淮山和薏米(mǐ )。用清水(shuǐ )把陈皮泡软,拍裂(liè )一小块姜,热锅,用(yòng )姜(jiāng )块在(zài )锅上擦(cā )一遍,放(fàng )两(liǎng )勺油,待油六成(chéng )热(rè )下鱼,煎至微黄。煮沸瓦煲里的清水,放入煎(jiān )煮好的鲫鱼和(hé )其(qí )他材料,武火煮沸,转(zhuǎn )中小火煲一个半小(xiǎo )时,下盐调味即可品尝。
