做法:春笋切(qiē )成片后加少许盐捞出后用清水浸泡,生姜切片,葱切成段(duàn )。锅(guō )烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片(piàn )、葱段翻(fān )炒(chǎo )1分钟左右。再(zài )加(jiā )入生抽、老抽、蚝油翻(fān )炒均匀(yún ),加入少量清水半掩(yǎn )住春笋,盖上锅盖大火(huǒ )煮开后转中(zhōng )火(huǒ )。煮到水快熬干的时候加入(rù )盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
