做法:春笋切成片(piàn )后(hòu )加少许盐捞出后用(yòng )清水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放(fàng )入(rù )生(shēng )姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再(zài )加入生(shēng )抽、老抽、蚝油(yóu )翻(fān )炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮(zhǔ )开后转(zhuǎn )中火。煮到(dào )水快熬干的时(shí )候加入盐,翻(fān )炒均匀(yún )稍收汁时盖上锅盖焖。
