做法:春笋(sǔn )切成片后加少(shǎo )许盐捞出后用清水(shuǐ )浸泡(pào ),生姜(jiāng )切片,葱(cōng )切成(chéng )段。锅烧热,倒入(rù )2勺油,放入生姜、春笋(sǔn )、牛肉片、葱(cōng )段翻(fān )炒(chǎo )1分钟(zhōng )左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上(shàng )锅盖大火煮开后转中火。煮到(dào )水(shuǐ )快(kuài )熬干的时候加(jiā )入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
