做法:春笋切成(chéng )片后加少许盐(yán )捞出(chū )后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱(cōng )段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀(yún ),加入少量清水半掩(yǎn )住春笋,盖(gài )上锅(guō )盖大火煮开后转(zhuǎn )中火。煮到(dào )水快熬干的时候加(jiā )入盐,翻炒(chǎo )均匀(yún )稍收(shōu )汁时盖上锅(guō )盖焖。
