做法:春笋(sǔn )切成片后(hòu )加少(shǎo )许(xǔ )盐捞出后用(yòng )清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住(zhù )春笋,盖上(shàng )锅(guō )盖大火煮开后转中火。煮到(dào )水快熬(áo )干的时候加入盐,翻炒(chǎo )均匀稍收汁(zhī )时盖上锅(guō )盖焖。
