做法:春笋切成片后加少许盐捞出(chū )后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入(rù )2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻(fān )炒1分钟左右。再加入(rù )生(shēng )抽、老抽、蚝(háo )油(yóu )翻炒均匀,加入少量清水半(bàn )掩住春笋(sǔn ),盖(gài )上锅(guō )盖大(dà )火煮(zhǔ )开后转中火。煮(zhǔ )到水快熬干的时(shí )候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖(mèn )。
