做法:春笋切成片后加少许盐(yán )捞出后用清水浸泡,生姜(jiāng )切片,葱切(qiē )成段。锅烧热,倒入(rù )2勺油,放入(rù )生姜、春(chūn )笋、牛肉片(piàn )、葱段(duàn )翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水半掩住春笋(sǔn ),盖(gài )上锅盖大火煮开后转(zhuǎn )中(zhōng )火(huǒ )。煮(zhǔ )到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
