做法:春笋(sǔn )切成片后加少许盐捞出(chū )后用清水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒(dǎo )入2勺油,放(fàng )入生(shēng )姜、春(chūn )笋、牛肉片(piàn )、葱段翻炒1分(fèn )钟左右。再(zài )加入生(shēng )抽、老抽、蚝油翻炒均(jun1 )匀,加入(rù )少量清(qīng )水(shuǐ )半掩(yǎn )住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮(zhǔ )到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
