做法:春笋切成(chéng )片后加少(shǎo )许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒(chǎo )均匀(yún ),加入(rù )少量清水半掩住春笋(sǔn ),盖上锅盖大火煮(zhǔ )开后转中火。煮(zhǔ )到水(shuǐ )快熬干的时候加入盐,翻(fān )炒(chǎo )均匀(yún )稍收汁时(shí )盖上锅盖焖(mèn )。
