做法:春(chūn )笋切成片后加少(shǎo )许盐(yán )捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅(guō )烧(shāo )热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒(chǎo )1分钟左右(yòu )。再加入生抽、老抽、蚝(háo )油(yóu )翻炒均匀,加入少量清(qīng )水半掩住春笋(sǔn ),盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖(mèn )。
