做法:春笋切成片后加少许盐捞出后用(yòng )清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生(shēng )姜(jiāng )、春笋、牛(niú )肉片、葱(cōng )段翻(fān )炒(chǎo )1分钟(zhōng )左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清(qīng )水半掩住春笋,盖(gài )上锅盖大火煮(zhǔ )开后转中火。煮到水快(kuài )熬干的时候加(jiā )入盐,翻炒均匀(yún )稍收(shōu )汁时盖上锅盖焖。
