做法(fǎ ):春笋切成片(piàn )后加少许盐捞出(chū )后(hòu )用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒(dǎo )入2勺油(yóu ),放入生姜、春(chūn )笋、牛肉片、葱(cōng )段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅(guō )盖大火煮开后转中(zhōng )火。煮到水快熬干的(de )时候加入盐,翻(fān )炒均匀稍收(shōu )汁时盖上锅盖(gài )焖。
