做(zuò )法:春笋切成片后加(jiā )少许盐捞出后用清水浸(jìn )泡,生姜切片(piàn ),葱切成段。锅烧(shāo )热(rè ),倒(dǎo )入2勺油,放入生姜、春笋(sǔn )、牛肉(ròu )片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均(jun1 )匀,加(jiā )入少量清水半掩住春(chūn )笋,盖上锅盖(gài )大火煮开后转中火。煮到水快熬干的时候(hòu )加入盐,翻炒均匀稍收汁时盖(gài )上(shàng )锅盖焖。
