做(zuò )法:春笋切成片后加少许盐捞出(chū )后用清水浸泡,生姜切片,葱(cōng )切(qiē )成(chéng )段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒(chǎo )1分钟左右。再加(jiā )入(rù )生抽(chōu )、老抽、蚝(háo )油翻炒均匀(yún ),加入少量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
