做法:春(chūn )笋切成片后加少许盐捞(lāo )出后用(yòng )清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热(rè ),倒(dǎo )入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再(zài )加入生抽、老抽(chōu )、蚝油翻炒均匀,加(jiā )入少量清水半掩住春笋,盖(gài )上锅盖大火煮(zhǔ )开后转中火。煮到水(shuǐ )快熬干(gàn )的时候加入盐,翻(fān )炒均匀稍收汁时盖上(shàng )锅盖(gài )焖。
