做法:春(chūn )笋切成片后(hòu )加少许(xǔ )盐捞出后用清水(shuǐ )浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入2勺油,放(fàng )入(rù )生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均(jun1 )匀,加入少量(liàng )清水半掩住春笋(sǔn ),盖上锅盖大火煮开后转中火(huǒ )。煮到水快熬干的时候(hòu )加(jiā )入(rù )盐,翻炒均匀稍收汁时盖上(shàng )锅盖(gài )焖。
