做法:春笋(sǔn )切成(chéng )片后(hòu )加少许盐捞出后用清水浸(jìn )泡,生姜切片,葱切(qiē )成段。锅(guō )烧热,倒入(rù )2勺油,放入生(shēng )姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻(fān )炒均匀,加入少(shǎo )量清水半掩住春笋,盖上锅盖大火(huǒ )煮开后(hòu )转中(zhōng )火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时(shí )盖(gài )上锅(guō )盖(gài )焖。
