做法:春笋切成片后加少许盐捞出后用清水(shuǐ )浸泡,生姜切(qiē )片(piàn ),葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀(yún ),加入少量清(qīng )水半掩住春笋,盖上锅盖(gài )大火煮开后转中火(huǒ )。煮到水快熬干的时候加(jiā )入(rù )盐,翻炒均匀稍收(shōu )汁(zhī )时盖(gài )上锅(guō )盖焖(mèn )。
