做法:春笋切成片后加少(shǎo )许盐捞出后用清水浸泡(pào ),生姜(jiāng )切(qiē )片,葱切成段(duàn )。锅烧(shāo )热,倒入2勺(sháo )油,放(fàng )入生姜(jiāng )、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽(chōu )、蚝油翻(fān )炒(chǎo )均匀,加入少量清水(shuǐ )半(bàn )掩住春笋,盖上锅盖大火煮开后转中火(huǒ )。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅(guō )盖焖。
