做法:春笋切成(chéng )片后加少许(xǔ )盐捞(lāo )出后用清(qīng )水浸泡,生姜切片(piàn ),葱切成(chéng )段。锅烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀(yún ),加(jiā )入少量清水半掩(yǎn )住春笋,盖上锅盖大(dà )火煮开后转中(zhōng )火。煮到(dào )水快熬(áo )干(gàn )的时候加入盐(yán ),翻炒均匀稍收汁时盖(gài )上(shàng )锅盖焖(mèn )。
