做(zuò )法:春(chūn )笋切成(chéng )片后加(jiā )少许盐捞出后(hòu )用清水浸泡,生姜切片,葱切成段。锅(guō )烧热(rè ),倒入(rù )2勺油,放入(rù )生姜、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻(fān )炒均匀,加入少量(liàng )清水半掩住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水快熬干(gàn )的时候加入盐,翻(fān )炒均(jun1 )匀稍收汁时盖上锅盖(gài )焖。
