做法(fǎ ):春笋切(qiē )成片后加少许盐(yán )捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段(duàn )。锅(guō )烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中(zhōng )火(huǒ )。煮到水快熬干的时候加入(rù )盐(yán ),翻(fān )炒均匀稍收(shōu )汁时盖上锅盖焖。
