做(zuò )法:春(chūn )笋切成(chéng )片后(hòu )加少(shǎo )许(xǔ )盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅(guō )烧热(rè ),倒(dǎo )入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀(yún ),加(jiā )入少量清水半掩住春(chūn )笋,盖上(shàng )锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
