做法:春笋切成片后加少许盐捞出后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入(rù )生抽、老抽(chōu )、蚝(háo )油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖上锅(guō )盖(gài )大火(huǒ )煮开后转中火。煮到(dào )水快熬(áo )干的时候加(jiā )入(rù )盐(yán ),翻炒均匀稍收汁时盖上锅(guō )盖焖。
