做法:春笋切成片后加少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段(duàn )。锅烧热(rè ),倒(dǎo )入2勺(sháo )油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右(yòu )。再加入生抽、老抽(chōu )、蚝(háo )油翻炒均匀,加入少量清(qīng )水(shuǐ )半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到(dào )水快熬干的(de )时候加入盐,翻炒均(jun1 )匀稍收汁时(shí )盖上锅(guō )盖(gài )焖(mèn )。
