做(zuò )法:春笋切成(chéng )片后加(jiā )少(shǎo )许盐(yán )捞出后用清水浸泡,生姜切(qiē )片(piàn ),葱切成段。锅烧热,倒入2勺(sháo )油(yóu ),放入生姜、春(chūn )笋、牛肉片(piàn )、葱段翻(fān )炒1分钟左右。再加入(rù )生(shēng )抽、老(lǎo )抽、蚝油翻(fān )炒均匀,加入少量(liàng )清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时候加入盐,翻炒均(jun1 )匀稍收汁时盖上锅盖焖。
