做法:春笋切成片后加少(shǎo )许盐捞出后用清水浸(jìn )泡,生姜切(qiē )片,葱切成(chéng )段(duàn )。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻(fān )炒1分钟左右。再加入生(shēng )抽、老抽、蚝油(yóu )翻炒均匀,加(jiā )入少量清水(shuǐ )半掩住(zhù )春(chūn )笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮到水快熬(áo )干的(de )时候加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
