做(zuò )法(fǎ ):春笋切成片(piàn )后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春(chūn )笋、牛(niú )肉(ròu )片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加(jiā )入(rù )少量清(qīng )水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转中火(huǒ )。煮到水快熬干(gàn )的时候加入盐,翻炒(chǎo )均(jun1 )匀稍收汁时盖上(shàng )锅盖焖(mèn )。
