做法:春笋切成片后加少许盐捞出后(hòu )用清(qīng )水浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅烧(shāo )热(rè ),倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加(jiā )入生抽、老抽(chōu )、蚝油翻炒均(jun1 )匀,加入(rù )少量清水半掩住春(chūn )笋,盖上锅盖大火(huǒ )煮开后转中火。煮(zhǔ )到(dào )水快熬干的时候(hòu )加入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。
