做法:春笋切成片后加少许盐捞出后用清(qīng )水浸泡,生姜(jiāng )切片,葱切成段。锅烧(shāo )热,倒入(rù )2勺(sháo )油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋(sǔn ),盖上锅(guō )盖大(dà )火煮开后转(zhuǎn )中(zhōng )火(huǒ )。煮到水快熬干的时候加入盐(yán ),翻(fān )炒均匀稍收汁时(shí )盖上锅盖焖(mèn )。
