做法:春笋(sǔn )切成片后加少许盐捞(lāo )出后(hòu )用清水浸泡,生姜(jiāng )切片,葱切成段。锅(guō )烧热,倒入2勺油(yóu ),放(fàng )入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清水半掩住(zhù )春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水(shuǐ )快熬(áo )干(gàn )的时(shí )候加(jiā )入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖(gài )焖。
