做(zuò )法:春笋(sǔn )切成片后加少许盐捞出后用清水浸泡,生姜切片,葱(cōng )切成段(duàn )。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟左(zuǒ )右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖(gài )上锅盖(gài )大火煮(zhǔ )开后转中(zhōng )火。煮到水(shuǐ )快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。
