做(zuò )法:春笋切成片(piàn )后加少许盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右(yòu )。再加入生抽、老抽、蚝油翻(fān )炒均匀(yún ),加入(rù )少量清水半掩住春笋(sǔn ),盖上锅(guō )盖大(dà )火煮开后转中(zhōng )火。煮到水快熬(áo )干的时候(hòu )加(jiā )入盐,翻(fān )炒(chǎo )均匀(yún )稍收汁时盖上(shàng )锅盖焖。
