做法:春笋切成(chéng )片后加(jiā )少许盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺油(yóu ),放入(rù )生姜、春笋、牛肉片、葱段翻(fān )炒1分(fèn )钟(zhōng )左(zuǒ )右。再(zài )加入生抽(chōu )、老抽、蚝(háo )油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到(dào )水快熬干(gàn )的时候加入盐,翻(fān )炒均匀稍收汁时盖(gài )上锅盖焖。
