做法:春笋切成片(piàn )后(hòu )加少许盐(yán )捞(lāo )出后用(yòng )清水浸(jìn )泡(pào ),生(shēng )姜切(qiē )片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅(guō )盖大火煮开后(hòu )转中(zhōng )火。煮到水(shuǐ )快熬干的时(shí )候加(jiā )入盐(yán ),翻(fān )炒均匀稍收汁时盖上锅盖焖。
