做法:春笋(sǔn )切成片后(hòu )加少(shǎo )许盐捞出后用清水(shuǐ )浸泡,生(shēng )姜切片(piàn ),葱(cōng )切(qiē )成段。锅(guō )烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到(dào )水(shuǐ )快熬干的时候加(jiā )入盐,翻炒均匀稍收汁(zhī )时盖(gài )上锅盖焖。
