做法:春笋切成片后加少许(xǔ )盐捞(lāo )出后(hòu )用清水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油(yóu ),放入生(shēng )姜(jiāng )、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝(háo )油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖上锅(guō )盖(gài )大火煮开后转中火。煮到水快熬干的时候加(jiā )入盐(yán ),翻炒均匀稍收汁时盖(gài )上锅(guō )盖焖。
