做法(fǎ ):春笋切(qiē )成片后加少许盐捞出后用(yòng )清(qīng )水浸泡,生姜切片(piàn ),葱切成段。锅(guō )烧热(rè ),倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮(zhǔ )到水快(kuài )熬干的时候加(jiā )入盐,翻(fān )炒均(jun1 )匀稍收汁(zhī )时(shí )盖上锅盖(gài )焖(mèn )。
