做法:春笋切成片(piàn )后加少许(xǔ )盐捞出后用清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻(fān )炒均匀(yún ),加(jiā )入少量(liàng )清(qīng )水半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮(zhǔ )到水(shuǐ )快熬干的时候加入盐,翻炒(chǎo )均匀稍收(shōu )汁时(shí )盖(gài )上锅盖焖。
