做法:春笋切成片后加少许盐捞出(chū )后用清水浸泡(pào ),生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春(chūn )笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加(jiā )入少量清水半掩住春笋,盖上(shàng )锅盖大(dà )火煮开后(hòu )转中火。煮到水(shuǐ )快(kuài )熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖(gài )上(shàng )锅盖(gài )焖。
