做法:春笋(sǔn )切成片后加(jiā )少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛(niú )肉(ròu )片、葱段翻(fān )炒1分(fèn )钟左(zuǒ )右(yòu )。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加(jiā )入少(shǎo )量清(qīng )水半掩住春笋,盖上(shàng )锅盖(gài )大火煮开后转中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍(shāo )收汁时盖(gài )上锅盖焖。
