做(zuò )法:春笋切成片后加(jiā )少许(xǔ )盐(yán )捞出(chū )后用清水(shuǐ )浸泡(pào ),生姜切片,葱(cōng )切成(chéng )段。锅(guō )烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量(liàng )清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候加入(rù )盐(yán ),翻炒均匀稍收汁时盖上(shàng )锅盖焖。
