做法:春(chūn )笋切成片后加少许盐(yán )捞出(chū )后用清水浸(jìn )泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入(rù )少量清水半掩住(zhù )春笋,盖(gài )上锅盖(gài )大火煮开后转中火。煮到(dào )水快(kuài )熬(áo )干的时(shí )候加入(rù )盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅盖焖。
