做法:春笋切成片(piàn )后加少许盐捞出后用清水浸(jìn )泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入(rù )生(shēng )抽、老(lǎo )抽、蚝(háo )油翻(fān )炒均匀,加入少量清水半掩住春笋(sǔn ),盖上锅盖大火(huǒ )煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍(shāo )收汁(zhī )时(shí )盖上(shàng )锅盖焖。
