做法:春笋切(qiē )成片(piàn )后加少许盐捞出(chū )后用(yòng )清水(shuǐ )浸泡(pào ),生姜切片,葱切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老(lǎo )抽、蚝油翻(fān )炒(chǎo )均匀,加入少量清水半掩住春(chūn )笋(sǔn ),盖上锅(guō )盖大火(huǒ )煮(zhǔ )开后转(zhuǎn )中火。煮到水快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
