做法:春笋(sǔn )切成片后加少许盐捞出后用清水浸泡,生(shēng )姜切片,葱切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分(fèn )钟(zhōng )左右。再加(jiā )入生(shēng )抽、老(lǎo )抽、蚝油翻炒均匀,加入少量(liàng )清水半掩(yǎn )住春笋,盖上(shàng )锅(guō )盖大火煮开后转中火。煮到水(shuǐ )快熬干(gàn )的时候加入盐,翻炒均匀(yún )稍收汁时盖上(shàng )锅盖焖。
