做(zuò )法(fǎ ):春笋(sǔn )切(qiē )成片(piàn )后(hòu )加少许盐捞出后用清水浸泡(pào ),生姜切片(piàn ),葱切成段。锅(guō )烧热(rè ),倒(dǎo )入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加(jiā )入盐,翻炒均(jun1 )匀稍收汁时盖上(shàng )锅盖焖。
